Pumpkin choc-chip muffins!

I like to bake so that Willow, Dexie and I have something yummy to take to FDC/school/work. Previously I had full reign but now Willow is at school I can’t send anything with nuts or chocolate. Which is a bit restrictive, but totally understandable. So tonight I’m making these muffins, but not putting choc chips in about a third of them.

Edited to add: OMG, these are delicious! I fiddled with the recipe a bit, bearing in mind that it is already translated from American. I used SR flour since we didn’t have any raising agents. This was a bit annoying because I would have liked to use the wholemeal plain flour for this recipe. Must spend up big in the baking aisle. I used half a butternut pumpkin which gave me a good amount of pumpkin – I roasted it whole for about 45mins and scraped the skin off, letting it cool before adding it to the egg mix. The muffins remind me a bit of pumpkin scones, but they are a bit lighter and fluffier. If I made them again I would use brown sugar instead of white sugar.

    I might give them a try for Sam’s day care, Candi. We aren’t allowed to send anything with chocolate or nuts either.
