I have a few recipes to share while I think of them.
One is an Asian Chicken Meatloaf. We can get nice minced breast meat for $5.99 for 5-600gm so this is a good way to use it. In a big bowl put two grated carrots, one grated zucchini, the chicken mince and one egg. Then add some green curry paste, crushed ginger, chilli and garlic. Add breadcrumbs until the mixture is firm. Turn into a meatloaf tin and cook in a 180 (160 FF) oven for 20 or so minutes. Serve with rice and salad.

Next is a sweet potato soup, again, asian inspired. I chopped up two potatoes, 3 carrots, a quarter of a butter nut pumpkin and two large sweet potatoes. I also put three handfuls of red lentils in the big saucepan which I’d added about 1 litre of water with 3 table spoons of chicken stock. Once the veggies have cooked, (I remove some for D to eat/mash through his hair) drain the water and set some aside. Add some green curry paste, crushed ginger, chilli and garlic and a tin of coconut milk. Puree it to your liking – I like it a bit chunky – and add water back in if necessary. I find that sweet potato and pumpkin tend to hold a lot of water anyway. Enjoy!
A made some roti last night and they will be good to eat with this soup.
A quick and easy dessert. Fresh berries are $8.99 for 300gm at my local supermarket, but frozen ones were $4.97 for a bag at my supermarket the other day. I make up some chocolate custard by following the directions on the packet, but adding a tablespoon of cooking cocoa. Simply pour some frozen berries in a bowl, make up the custard and pour over the top. The contrast between hot and cold is interesting.
